Seriously, is there anything cuter?
I have been making these cookies for over 20 years, when my son turned 4 and the theme was Scooby Doo. Scooby Snacks right? They were always requested as the treat to bring in for his birthday, year after year after year. They were always a hit, for all my kids, and I think one of them was told by a classmate, that they couldn’t wait for their birthday to come because they knew they’d get a hamburger cookie.
These require no effort, just a little time, and once you get the hang of it (after like 4) you get into a rhythm and there are done in no time.
Ingredients (yield approximately 40)
1 boxes Nilla Wafers (hamburger buns)
1 box Keebler Grasshoppers (burgers)
1 container vanilla icing (mayo)
2 squeeze tubes of red icing (ketchup)
1 small bag sweetened shredded coconut (lettuce)
Green food dye
Honey
Sesame Seeds
In resealable container place about 2 cups of the shredded coconut. Add about 4 drops green dye, cover with lid and shake it, until the coconut is fully coated in green dye. Should look like lettuce.
Dab a small amount of white icing to the flat side of 1 Nilla Wafer (the bottom bun), on top of that place the Grasshopper Cookie “burger”. On top of the “burger” squeeze out a small circle of red icing “ketchup” and set aside. Dab a small amount of white icing to the 2nd Nilla Wafer “top bun” and place frosting side down into green dyed coconut “lettuce”. Place the lettuce covered bun on top of the ketchup topped burger and press down every so slightly. This makes the ketchup spread out some. Place on a wax paper covered baking sheet. Repeat until finished with Grasshopper cookies.
Put approximately 1/3 cup honey in microwave safe dish and zap for about 15 seconds. Using a pastry brush, paint honey on top of each bun and sprinkle with sesame seeds. Burgers done!

*I buy 2 boxes of Nilla Wafers just to be safe that each side is perfect, sometimes you get a box with a lot of broken wafers and that just looks like a half eaten burger.
Microwaving the honey for just a few seconds helps make it runnier and easier to paint on the buns.
