Sockeye salmon … that beautiful red color. Any time I see it on sale, I buy it – I simply have to. This marinade I’ve been using on salmon for years, have no idea how I stumbled across it or who gave it to me, but it works for salmon and I use it pretty much every time I make it.
This was for 2 lbs. of sockeye salmon
Marinade
1/2 cup fresh orange juice
1/4 cup soy sauce
1/4 cup extra virgin olive oil
2 Tbs. balsamic vinegar
1 tsp red pepper flakes
salt and pepper to taste
Mix marinade ingredients together. Place salmon in a sealable container, and pour half of the marinade over, about 30 minutes before grilling. Preheat grill.
When grill is nice and hot, place salmon on a cedar plank or in my case, since I was out of planks, a piece of foil. Maybe I go against popular belief here, but I don’t flip it as I don’t want it overdone. I keep the heat off right under it, but have the outer burners on low. The skin still gets crispy and it is still a beautiful pinky-red on top when done. I grilled for approximately 15 to 20 minutes.

Of course if you have a better way of grilling, please do, but the marinade is wonderful for however you choose to do salmon!
